Harvesting olive oil trees
The traditional method that is commonly used for harvesting the olive oil trees is the use of olive oil sheets. Olive oil sheets are specially designed sheets, which are placed on the lower level of the trees and then producers "hit" the branches, in order for the olives to be gathered. The olives are crushed the same day or no later than 48 hours so as to keep unaltered and pure all the beneficial ingredients concentrated in the oil.
Ideal period of gathering the olives
We collect the olives from the beginning of November until the end of January. It is within this time frame (period) that the olives are mature enough to be processed.
Production steps
Once the olives are collected, we transfer them to our olive factory, in order to begin the production process. Olive oil goes through different production stages until the "flesh" of olive oil is gathered. The process of segregating the flesh is really important to be done according to certified standards, otherwise the quality of the olive oil could be damaged. Likewise, of most importance is the temperature during the distillation of the olive "juice". For example, if high temperatures are used this could damage the beneficial and precious ingredients. It is for this reason that within our factory we implement the "in cold method" of distillation (<27 C), which enables us to produce olive oil low in acidity and with exceptional quality.
